Lavaut Saint-Jacques, located on a south-facing slope, receives abundant sunlight and is considered one of Gevrey-Chambertin's finest Premier Cru plots. This exceptional bottling stands as a testament to Arnaud Mortet's meticulous craft, utilizing a "decorticated" whole-cluster technique—where central stems are painstakingly removed by hand to harness the lift of the pedicels without bitter stem tannins. The resulting wine is strikingly perfumed, exotic, and hedonistic. It balances a tight, velvety texture with a vibrant core of wild berries, plums, and sophisticated spice. A profound, complex, and deeply persistent red that rewards those with the patience to let it reveal its many layers, refreshing acidity and a velvety, almost endless finish.
