Cultivated on a 350-meter-high plateau in Chevannes, this Chardonnay benefits from a cooler, windswept climate that imbues the wine with remarkable freshness and precision. Produced through meticulous bio-dynamic practices - including hand-harvesting, natural yeast fermentation in concrete vats, and gentle extraction - this wine represents a pure, unadulterated reflection of its lime-clay soil. Aged for 15 - 18 months in a low percentage of new oak and bottled according to lunar cycles, it offers an elegant, complex profile that captures the essence of this unique landscape.
